closed work permit LMIA transfer to different employer

Hi,

I am currently working for company A on a closed work permit LMIA visa.

I have received an offer from company B and they have applied for a new LMIA visa and are currently in processing for a work permit transfer. Recently, I have received another offer from company C, and company C is sort of my dream company to work for. Can I say no to company B and ask company C to apply for a new LMIA? Will this be any issues with IRCC doing this?
