Changing Employer while waiting for Open Work Permit from PR Sponsorship?

Hello!
So my fiancé is a citizen and he recently applied to sponsor me and I included the Open Work Permit application with the PR application. I am currently under a closed work permit that expires in July 2021. I was laid off in May because of COVID and have been searching for a new job to sponsor me since. So in Summary, my question is
What happens if I find a new employer willing to sponsor me a new closed work permit, but the IRCC has my application for an open work permit?
Does the open work permit get cancelled or written over? Nothing happens? Should I just wait until I have the OWP some time next year and stay jobless until then?

You have to wait until the OWP is issued before you will be able to start working with a new employer.

You have implied status now. However this implied status only allows you to continue working under the conditions of your original work permit. In other words, you can only work at this time for the employer listed under your closed work permit.

If your new employer is willing to sponsor you under a new closed work permit, they would obtain a new LMIA and then you would apply for a new closed work permit. The OWP will continue to be processed.
