I would like to apply for my PR under the new CEC I will of been in 1 year in April. My employment has said they would write me a letter but I was just wondering on the TAX form and if this is the only document I need to show or would they want to see other things like Pay Slips?? As I don't have them!! :(
Also I read somewhere that you and your boss have to go in for an interview and I was just wondering if this would be the case, as my boss is happy to write me a letter etc but don't think they would be happy to have an interview!!??

Pay slips are not required (they are useful in some cases). But you should have your T4 very soon, if not already. You might not receive your Notice of Assessment before you apply, but you should be sure to file your tax return ASAP so that you will have your NOA if/when CIC requests it.

No, bosses do not have to "go in for an interview." It is possible that CIC will call them to verify information in the letter of employment.
 
Pay slips are useful for those, like myself, that are filing taxes the first time and wont get the T4 until well after they are eligible.

I was eligible in January, but my employer wont issue the T4 until the very last day of February (because they have like 4,000 of them). So, I attached pay slips, since they include my tax contributions, and an explanation letter. Made sure to emphasize that the T4 and NOA will be sent to them, as soon as they are available.

Phone calls for verifications are more probable than interviews. Haven't heard anyone mention that their employer had been called in.

This is fairly sound advice. I'd suggest that instead of sending a years supply of pay slips, you send the most recent/last one, which should reflect your annual salary to date along with paid taxes. This info SHOULD match that which will be found on T4.
 
Precisely! I included the year-end slip, which reflects the total annual contributions, salary and hours worked. Also, the latest slip (at the time of application), so that I could establish consistency.

Will include the most current pay slip when forwarding the T4 as well.

Notice of Assessment (NOA) is the document that the Canada Revenue Agency sends to you after they review your tax return. Basically, it is proof that you filed (and paid or did not pay) your taxes.

You can proceed with your application with T4/payslips. The NOA can take 18 weeks to process so I wouldn't wait on this before submitting your application!
