I have found that my Great Grandfather was born in Canada. Is there anyway to get information on that and whether his descendants would be eligible for Canadian residency?
 
Unless one of your parents was officially confirmed as a Canadian citizen before your birth - I think you're completely out of luck. You can take the following online questionnaire to confirm:

How would I find out if he was ever given citizenship to Canada? Are there documents that can be researched for immigrants from Scotland?

Your father would either know because he applied for it himself and it was received - or his parents would know because they applied for it and it was received - or because they were able to register his birth with Canada when he was born.
