So I read horror stories of people getting their bags searched and computer looked into...
Sounds like a total privacy infringement! (Probably not, but just sayin... ::)
When that happens, can I ask the officer(s) to stop?
I'd say a nicer version of "Enough. You don't have to let me enter Canada if you have to look through EVERYTHING. I want to leave."
Is that possible? Is that called Voluntary leaving or something like that? Or would that be an offense on my part?

I don't think this is possible. Anyways I'm not a professional, but you can always your lawyer for legal advice or contact the CBSA for details.

Oh no! I thought I read (probably on this forum) that it was possible..., like, it'd be considered as 'withdrawing seeking entry' or something. I looked but can't find the page now :'(

By the time that you are in secondary inspection you are somewhat stuck.
Don't forget that there are two functions being served from that point on.

1) immigration control, which you might have some control over.
2) Customs which you almost certainly have no control over.

Thank you. Could you please elaborate? What do you mean by:

1) immigration control, which you might have some control over.
2) Customs which you almost certainly have no control over.

immigration control - like I get to say whether I want to seek entry or not?
customs - you mean when officers check your bags so there are no drugs, weapons etc inside?

Yes. See http://www.cic.gc.ca/english/resources/manuals/ for all the enforcement manuals. Those are just the CIC ones. I'm sure Customs have another set.
