I'll be visiting Canada in a few days and one of the things my girlfriend over there has asked me to do is come into work with her one night and help her our in the back with the stock. I argued as a visitor I am technically not allowed to be working in any degree but she argued back saying it doesn't count as it's out of hours and it's unpaid too, but I was still skeptical.

Am I safe to help her out or should I refrain for participating in case of legal terms and conditions preventing me as a visitor doing this sort of stuff?

You win...it’s work and it’s illegal. Whether you are caught or reported is a different matter. There was a case a few years ago where a guy from Australia went to the US with his Canadian girlfriend for a weekend. On the way back (he had been in Canada prior) CBSA searched his phone and found pictures of him helping her paint her house. The booted him for working illegally (IMO, way overboard by CBSA).
My best advice, use your best personal judgement.

You're right - she's wrong. CBSA will classify this as illegal work even thought you're not being paid.
