I just found out that i am supposed to apply under EE only after gaining one year of experience under my field or say 1561 hours. Is it ok to gain 1561 hours of experience in less than one year by working more hours a week (approx. 40-42 hours/week) and covering up the time?

No. CIC's strict requirement is the following (52 weeks * 30hrs per week) = 1,560 hrs. There are no exceptions to this requirement.

Note: the EE system only allows applicants to enter the work Start and End dates in the format 'mm/yyyy'. Hence the system awards points to applicants at the start of the '12 month' regardless of when during the 1st month the applicant started working (Eg a person who started working on 15 January will receive CRS points for working 1 year in December. If an ITA is accepted and the person applies the VO has the authority to deny the application if the CRS points given to the applicant for 1 yr of work enabled them to accumulate CRS points to exceed the CRS requirement for the round in which they received the ITA (Eg if a person had CRS points of 460, and the CRS score in the draw in which they received the ITA was 450, the VO will re-calculate the score by subtracting '40 CRS points' for 1 year of Canadian work experience and send the applicant a rejection notice.

So basically, I am currently working from 8 to 5 five days a week which makes it probably 42/week. How under this case would I be counting my experience.

Basically, this.
However, I wanted to add to this by saying that part time work also counts towards this requirement. CIC defines part time work as being less than 30 hours a week. So let's say you work for 20 hours a week. You would then need continuous non stop part time employment for 1560/20=78 weeks, which is roughly a year and a half.

TL;DR- you need AT LEAST 52 weeks to meet the requirement, but you can take more than 52 weeks as well, as long as the work experience is continuous.

That is 45 hours every week. 45*52= 1,840 hours in one year.
You need at least one year of continuous experience to qualify in any case.

EDIT: I stand corrected, nothing over 30 hours counts for full time, as JoacRy points out :) Disregard this post!

Slight disagreement in this respect. If full-time hrs is 30hrs per week (any hrs worked above this don't count). Hence part-time is 15hrs per week (any hrs worked between 15-30hrs don't count).

Hence you need to work for 104 weeks at 15hrs per week part-time to satisfy the 1 year of Canadian work experience requirement.

Do you agree?

I am pretty sure any hours under 30 count as is, as opposed to nothing above 15 hours being counted at all. At least, that is how it has worked in my experience.
I do not know about any hours above 30 being counted or not- it is possible they are not counted. But I am reasonably sure that under 30, it's not discrete like that.

Count your experience as 30hrs per week. CIC disregards anything above 30 hrs per week.

I found what you were saying!

'Part time employment is defined as
15 hours/week for 24 months = 1 year full time (1,560 hours)'

So yeah, it looks like you need to have 2 years of part time work for it to count, and anything over 15 hours is simply not counted.
That's honestly a bit bizarre, but alright.
 
So if i am working 42 hours a week. Does that means its not genuine experience under CIC application? Does that means i have to decrease my hours to 30 per week now?

No - it doesn't mean that.

You can still work 42 hours per week. But it will be counted the same as a 30 hour work week for EE.
