I was on the Ontario PNP. My company sponsored me and got me the nomination. Now I've done the landing thing but still waiting for the PR card. At this stage, am I consider to be a Permanent Resident therefore I could change my job? Or should I wait the PR card is received to change my job?
 
no go ahead you are a legal pr.Card is no status,its just for traveling.You got your status when you landed

Another question, regarding the travel. I'm from a visa exempt country (i.e. I don't need a visa to enter Canada even before I get my PR). Do I still have to wait for the PR card to travel and enter back in Canada?

No, you don't need to wait for the PR card to travel. As a visa-exempt citizen, you can travel back to Canada on the strength of just your passport. When you arrive in Canada and go through immigration, they will be able to see your PR status when they swipe your passport.
