I somehow ended up applying late (on 3rd April) under the SDS category while arranging all the documents. My classes begin in May 2022. Can I start taking classes or defer to September 2022. I don't want to delay as nobody knows about the future (the COVID problem is still lurking).

Whether you can start studying from your home country will dePend on your school and program. You’ll need to look at the refund policy closely but you are always taking a risk if you start a program without a study permit. You’ll need to speak to your school about deferring admission and whether it is possible and whether it is possible for September 2022. If you do defer you need to send a webform updating your new LOA.
