I doubt anyone is going to take the time to list the thousands and thousands of professions...

Generally speaking, work permits are very difficult to get for any profession since employers need to obtain an approved LMIA and this process is long and extensive (with no guarantee of success).

Information about Canada's immigration programs is available here: http://www.cic.gc.ca/english/immigrate/index.asp There's no occupation list and many occupations are accepted. Best to dedicate time to familiarizing yourself with the requirements of each program as a first step.
 
To add to the above although not a list of occupations in demand if the OP searches the NOC database for a specific occupation and if that occupation is classified as NOC 0,A or B that can be seen as a positive for any application. But as said should not be read as a list of occupations in demand or any indication would guarantee any immigration application.
