You don't have to mail the forms from Ireland. You are allowed to be in Canada while you apply outland. Just make sure that you request to extend your visit status before it expires. Applying for sponsorship does not automatically allow you to overstay.

Is it a different form for each processing centre? I will be sending my forms to UK. As we a married 5years, i hope the only reason for an interview would be the criminal records - and that will be just to tell me i need to be rehabilitated. Hopefully as it was all nearly 11years ago, including the suspended sentence, it will be ok!

WORST case scenario, if my PR application is refused, what about my daughters? They are Canadian through my wife, their mother, but is it for the custody courts to decide what happens them?

When you are on the CIC website looking at your forms, there is a link at the bottom for the visa office specific forms. The instructions for medicals and photos and the checklist of additional documents varies a bit between locations.

If your PR is absolutely refused and they tell you that you may never enter Canada as long as you live (ok, I think that is unlikely but we are playing the "if" game here), then it depends on your wife. Your daughters I assume are also Irish through you. They don't necessarily have to live in Canada. You as a family can live in Ireland or in any country of the EU without having to worry about your conviction. If your wife were to choose Canada over you though, there is not much you would be able to do about it.
 
Actually - you will be sending your entire package to Mississauga (this is the first step for all outland applications). Once Mississauga has finished their bit, they will then forward the package to the UK.
