If I apply for Family (Spousal) Sponsorship and then enter Canada on a visitor visa (as a British citizen), do I have to leave when my visitor visa expires or can I stay until they reach a decision on my application?
 
you should apply for extension for your visitor visa before your visitor visa expired. You can do online / offline.

I wrote a letter saying that I want to wait for my PR in Canada with my family etc.
Also attached a email/ letter from CIC (Sponsor approval letter etc) to prove my application is processing.

I got a year without any problem.

So you might have a year or so.

British Citizens don't need visas to enter Canada, but you will need an eTa by March 2016 to arrive by air. You are allowed to stay up to 6 months, and a month before this time is up, you should apply to extend your stay as mentioned. I assume you will be applying outland.
