Our application got delivered early December.

What are we to expect next? Specifically, are we to expect any mail to our door regarding this?

We wish to take a holiday for a month or two, but if we are to expect any post (signing required) mail, we want to delay until that is taken care of first.

Unfortunately, there might not be a straight answer to that question.
You might get first AOR ( acknowledgement of receipt) and that's always by email. But not everybody gets one.
Second, you will (normally if your case is a regular case) an approval for stage 1. it's either by email, or post... and there is no way of knowing in advance what it is. However, it usually arrives by normal post, so you don't need to be there to sign it. Just make sure that somebody is there to open the letter and tell you that you have been approved, and that's it...
Then your file goes to the Visa Office and it's more waiting again.
Honestly, if I were you, I would wait until you have the first stage approval. If for any reason, there is a document missing in your application, or you missed one signature on one of your forms, you might get a letter about it, or the whole package sent back... if you're not home, you'll have a hard time completing it and sending it etc...
Stage 1 is quite "reasonable" these days, and most likely you'll hear from CIC in the next 2 to 3 weeks. My advise, considering all the elements above, would be to wait until you have at least stage 1 done. The stage 2 waiting time is much longer, and if you can take a holiday during that time, that's great! :-) but that's only my opinion.

Unless you forgot something, the only things you may get are acknowledgment of receipt and potentially sponsor approval. However, these aren't always communicated.

CIC usually gives you 60 days to replace any missing documents. Have someone you really trust pick up your mail. If you get something from CIC, you can always have that trusted person send new copies or you can print out a new form and send it in via courier.

Don't be afraid to travel. There are solutions to all of it. The only point I would be worried about is if there isn't anyone you trust enough to pick up your mail and open letters. Also, if you provided an email, they will probably use your email for communication.

In your application, did you state your email address and that all correspondence should be done via email? If so then you really shouldn't expect any actual snail-mail to be delivered to your home, except for the final COPR at very end of the process.

In case CIC needs more info or to provide updates like AOR, they will email to the address you provided. So you don't really have to be at home during the process. In our case after they started processing the applicant application at foreign visa office, they requested 1 additional document and gave us 15 days to submit it.

For your case i wouldn't worry at all about travelling. You will only be concerned about the sponsor app at this point (they won't even get to your applicant app until Jan or Feb at best) and as others mentioned you will have 60 days to respond here.
