Has anyone ever done something like this before? I am at an American university (University of North Dakota) and would like to complete my K-12 Counseling internship at a school in Vancouver. If I'm able to secure a placement with a site there, would I then be able to get a study visa? Or would I need a work visa? Something else? Thanks in advance!

You would need a job offer from a school in Canada, an approved LMIA from that school and a work permit.
The chances of finding a school in Canada willing to go through the LMIA process are probably next to nil.
Recommend you complete your internship in the U.S. instead and consider another means of getting to Canada if that's your goal.

You're certain I would need a work visa, even for an unpaid internship? People on the ground in the lower mainland have also told me they are absolutely desperate for counselors. I remember looking into LMIA process a few years ago for another situation and was pretty discouraged by the feasability.

Yes, I'm certain. It doesn't matter if you are paid or not. You need a work permit.

You’d still be displacing a Canadian that could do the position, thus you need a work permit
Different country, different rules. Would advise looking for an internship in the US
