Hello,

We just got a baby born in Canada. Us, his parents, have a permanent resident status. We are planning to travel to our country of origin during a couple of months.

I just wanted to ask if the time away from Canada accompanying a Canadian Citizen (a baby) will be taking under consideration when calculating the time to apply for citizenship?

No - this time definitely will not count towards citizenship. You need to be physically present in Canada to count days towards citizenship.

I think you are thinking of the rule that allows a PR spouse to maintain their PR status by accompanying their citizen spouse outside of Canada. However this rule doesn't apply to parent / children relationships. In other words, your citizen child won't help you to maintain PR status while outside of Canada either. Once again, you need to be physically present in Canada to maintain PR.
