When I submit our sponsorship application, my employment letter will be about 1 month old (or possibly 1 month + few days).....the police, the sworn translator, and the notary, are all taking so long to issue the things that I need, that I'm a bit delayed...

I hope a 1 month old employment letter is acceptable by the CIC?

(Requesting a new employment letter from my employer would take even longer, since I'm in Indonesia and they're in Canada...)

It is okay and will be acceptable by CIC. Make sure your employer confirms the contents of letter if CIC calls for verification. Take Care.
 
I'm sure CIC understand that not all documents can be issued on the same date! :-) so no worries... there are only a few documents that have an "expiry" date (Police Checks), but if CIC wanted a letter from less than a month, then they would have asked for it. So don't worry about it!

Documentation, which were issued not later than 3 months accepted. It relates to employment letter, police clearance, etc.
