Having trouble with gift-of-deed notarization. Suggestions needed.

Greetings!

My parents wire-transferred $5,000 (minus $10 processing fees) to my bank account to help me fulfill the settlement funds requirement. Because we did not do this early enough that this transfer is reflected in my 6-month bank deposit and needs an accompanying gift-of-deed letter as an explanation.

Unfortunately, I seem to have trouble having this letter notarized both in the US (where I currently live) and in China (where my parents are at). US notaries that I have spoken to all decline to notarize, and they explained to me that the law requires the donors to be present for the signing. A similar issue is faced by my parents in China when we attempted to have the letter notarized there--One of the lawyers mentioned that if there is any mentioning of two parties--namely donor and donee, they must both be present for the notarization.

Has anyone here had similar needs? How did you handle the situation and get the document notarized? Are there alternative documents if a notarized gift-of-deed is a no-go?

I didn’t notarize my letter. My father in law gave us a check of 5000€ after we got ITA. I submitted a letter signed by him that it’s a gift and 6 months bank statements. My application is approved.
