Soon, Im going to go to Canada for a year of work and travel. During this time I want to visit the USA once for sure but I was wondering if I could do it twice. Id like to know if and how I could first visit Seattle then go back to Canada and later visit Washington etc.. I would also like to fly back to Germany from Washington. The thing is that as far as i understood, I can visit the US without a visa from Canada but I dont know If I could do it twice and even fly back from there.
 
If you are visa exempt for Canada and visa waiver for the US no reason why you could not visit the US more than once or as many times as you like as long as US CBP allow you entry and CBSA back into Canada where assume will have a valid reason for reentry with your work permit.

Assuming you have a passport covered by the US visa waiver program you will either need an ESTA to fly to the US or complete an I94 application to cross a land border. Can make things easier to just apply for an ESTA valid for 2 years which puts you in the system even though still need an i94 for a land border.

Also no reason why you cannot fly from Washington to Germany which is what your answer would be to USCBP on your plans to leave the US after your visit.
