I sent 3 weeks ago the documents to Syndey, NS.
Unfortunately I sent it via USPS regular mail, so I have no way of knowing if it arrived.
Do they usually notify (email/mail) when they receive the documents? (without the decision yet).
I know it depends a lot on the case, but on average how long does it take to notify you that they received the package?

No, they don't. You will just find out when you receive AOR.
Currently applicants whose application reached NS on 27th-28th of Sep are receiving AOR.

Isn't AOR = Acknowledgment of Receipt? Isn't this when they send you mail/email with the fact that they received your documents?

They at CIO they check your application form is complete, properly filled and just a quick view that your claimed points are ok. Then the AOR is send your application to your local visa office. This AOR is that your application for immigration is received by Canadian authorities.
 
I applied begining of July to Nova Scotia. Got email from them on 29th September to submit docs, so took approx 3 months.
