Am I right to assume the additional dependents form is ONLY if you run out of space on the application form?

I think those are for when you have more than 5 dependents

and dependants mean children ???my wife says it means sister, brother parents.is this correct???

It means any children under the age of 18 that is not married or in a common law relationship.

You guys really need to read the guide, as this is clearly explained.

http://www.cic.gc.ca/english/information/applications/guides/3999Etoc.asp#family

Family members

Your family members include your spouse or common-law partner, your dependent children and any children that are their dependent children.

Dependant(s)

You must include your spouse or common-law partner, if applicable, and all of your dependent children, and those of your spouse or common-law partner, who are not already permanent residents or Canadian citizens.

Correction, under the age of 19.

Your wife may be thinking of the Additional Family Information form, where you do have to list all children, your parents, and your siblings. For the other forms, dependents means your children under 19 if not married or common-law, etc., as mentioned above.

Oops yes correct under 19 . Sorry i don't know why i wrote 18 . Something else on my mind.
