I have no idea. I'm guessing work experience, but I don't hit 3 years until May according to my calculations...

Work experience is not within your control, rather look at maxing out IELTS scores, Learn French, Apply for PNPs

While it is too early to predict, with back to back draws there may be some scope. If there’s any scope to increase your CRS work towards it.

No! Do not cancel the profile if you will be hitting the 1 year mark within the next month...

You are given 60 days to accept the ITA... Just wait till you hit the 1 year work experience and then fully submit your application... Technically, considering you do not get fired or quit, you are hitting the 1 year mark before your application actually is in progress... CIC will not refuse your application.. There are no "safe" and "safer" courses here. Do not cancel your profile and try to get an ITA as fast as possible.

I'm ok with my current score as it can only go up with time. Language is maxed Just confused on why my score suddenly went up to 478 when it shouldnt until May.

Yes, you always were required to prove your English language skills and IELTS has always been one of the options to do that. Pre-2015 the express entry system did not exist, thus an overall band of 6.5 was good enough as it fulfilled the eligibility criteria and applications were processed on First come, First serve basis.
