I have a work visa to Canada and I will be leaving my country for Canada for 2 years work visa. CAn I travel on one way ticket as it's a long time from now to determine which date i will return?

Absolutly yes.
IN some cases (low skilled positions) the employer is required to pay for your airfair. Don't know your case.
