What is the probability that the CIC will contact my employer about my working experience letter? My employer will give me a letter because he thinks I need it for something else. I do not want him to know this is for Canada immigration. I do not want him to know I will be leaving the company after 10 years. I told him it was for an application to buy a house.

I don't know how often they do it.  Neither of mine was contacted way back when but surely you can write a cover letter explaining that your boss doesn't know and ask them not to contact him.  Instead you can possibly provide another contact they can ask if they want to, for example a coworker who can verify that you work there and what you do there.
