Right now I am studying at Greenwich college for my BA. This BA is 3 years and I am graduating May 2012. I am applying next month though, will it count at all or not? (I am a dependent)

No, it wont be counted. Until you complete/pass the course you do not hold the degree to claim the points.

that was my guess too, but do you think that if i include even a paper with these 2 years even that it will help our application seem better than without it? even if it doesn't give us more points

No way, you have to complete the degree first to claim any points.

It is not going to add any advantage to your application so it will simply be grouped as 'not necessary' docs - there is no harm in including them as it will also support your statement regarding the education breakdown you will list in the Background/Declaration form.
