Should the spouse of the principal applicant under skilled workers get a job offer - does it help the application in anyway ?

No it does not help, your spouse will have the same entitlement as you and her length of stay will be the same as yours, except she will have an open work permit, whereas yours will be limited to your sponsored employee.
