In applications for sponsorship it talks about a co-signer.  There is a form for declaration for Common-Law union.  It states that the form "must be completed and signed by the sponsor and common law partner, only if the later is a co-signer on the application".  If the common-law partner is the person being sponsored are they considered a co-signer also?  Or should this form be left blank?

You do not need/have a co-signer if you are sponsoring your spouse, that section is for when you are sponsoring OTHER family members and need a co-signer in order to meet the Low Income Cut Off.  Just leave put N/A in the co-signer sections, you don't need to submit the form.

Thanks for your reply, very useful.  We were also wondering if printed flight intineraries and emails are considered originals or do they have to be cerftified when they are being enclosed as supporting documents in a visa application?

You can send in photocopies of everything unless it specifically asks for the original.
See the document checklist.
