I recently received my PR. I would like to sponsor my parents. Will I have a better chance of being approved as a sponsor If my wife(a canadian citizen) co-signs? She is currently on maternaty leave from work so she is not making very much money.

 Any advice would be appreciated.

I assume they go by what you made in the last tax year.  If your wife co-signs, you can add her income.  It's not about having a better chance, it's about having a chance at all.  If you don't make enough money, they will deny you.
