My wife is a BA (English) and we want to try for immigration under the category of "Social Worker". Is a degree in Sociology required to start the immigration process? (She has a 4 years of experience in a registered NGO in New Delhi.)

As far as in know, no specific degree is required in social work. I filed my case also in social work and my degrees are in IT & Finance and i have reiceved my PER.

I still recommend you to ask other senior members as well to get other ideas as well. Till i dont get my application fully processed n aquire Visa i cannot comment on your question for sure.

See, According to my knowledge CIC has clearly focused on work experience. they have also mention that it will be accepted if your work experience is different i.e not matched with your education. education is pointing u, but work exp. must match with the current 29 eligible NOC for FSW.
