By the way gurdeep, do you think visa officer's upon requesting my work experience documents, do you think I might be asked to present copy of my invoices, tax reports and others related to my tax abligations and administration?
If not, do you think it'll serve a purpose if I go out of my way and provide with copies of these kind of documents anyway?

They should not ask for invoices and Tax Reports. You have more than 12 years of work experince, out of that 4 years as a self employed. You have completed the 4 years of work experience to get full points for that. You are adding the self employment experience not to leave any gap between your actual work and self employment. As per my knowlege you should not worry about invoices and tax reports.
In my case I also have given self employment experience for number of years, but they never asked me for this kind of docs. I already sent my passports for visa stamping.
