I just received my Option C print-out to be sent along with my application to sponsor my wife.

I was thinking is it ok to white-out my SIN number on Option C print-out. In nowhere in the sponsorship/ immigration Form CIC ask for my SIN number, so why would I voluntarily provide that in the Option C print-out. Isn't it a privacy issue? The Option C print-out has my name and address clearly shown.

Any suggesstion please?

Believe me when I say I am BIG on privacy issues, as I am.  However in this case I did not white out my SIN#, it's going to a government agency after all, just a different one than CRA.  If you are still inclined to white it out, don't send an Option "C", rather send the alternatives required of those NOT sending in an Option "C".  IMHO, you are only making things more difficult for yourself in the long run.
