I thought I read somewhere that the pictures for weddings and outings need to be labeled is this correct?

Yes it is always best to label with date, location and who is in the pictures, particularly if family and friends.

OK, the dates I might have trouble with as I do not remember every date a picture was taken.

I don't think it's that important to date every single one. If you know the month, that should be fine. I didn't date and label every single picture and we got our visa with no problem.
