If you are approved, when they are ready to issue the visa they require your passport to stamp the visa counterfoil in it and then you must "land" at a port of entry to Canada.  Only then will they isue the PR card which they will only mail to an address in Canada.  If you are back in Canada when they are ready to issue the visa you can send your passport to them by courier.  Yes, as soon as you are landed as a PR you can go to a Service Canada office to apply for a Social Insurance Number enabling you to work.
ok so i can stay in canada and just send my passport off then they will mail me my card sweet

Once you have landed, your card will be posted to your address, delivery times vary, four to six weeks is the often quoted timeframe.

You are in Canada now, but you are not 'landed' in Canada - 'landed in Canada' means you come here with your PR visa and officially enter Canada as a permanent resident.
After the interview, you should be able to enter Canada again exactly the same way you did before: as a temporary visitor or tourist. UK citizens don't need a visa to enter Canada for a short time, so you should be fine.

Yes you have to leave Canada (maybe only in the direction of the USA) or you can make an appointment at a CIC office in Canada to "land" (bookings need to be made about one month in advance).
