Hi I also applied with aeo through london office for me too they requested many docs during update
I feel they ask these documents to check the geniuness of the job on offer and your ability to perform the job offered
They also try to ascertain the relevance of your qualification and experience to the job you have secured an aeo for
Hope this helps however this is my idea seniors inputs will be highly appreciated
Please elobrate as to what all docs were requested your noc and aeo noc etc to discuss further
Thanks abd best regards
