2. Can I write date, description, who's in the picture, etc. on the back of the photo?
3. Any set amount of photos required?
4. Do we have to include everything in the checklist and can we include additional items not in the checklist?

1. Yes, you can.
2. You have to label pictures with, who is in it, relationship to you/your spouse, location, occasion, date it was taken etc.
3. No set amounts, but people send about 50 photos on average
4. You can send anything and everything that you think will support your case as being genuine including, emails sent to each other, Phone call logs/skype, gift receipts, cards sent to each other etc
5. Make one package and send it to CPC-Mississauga

1) Yes, actually it would be very good to show that both families were present at the wedding
2) Date of marriage/engagement,  name of the venu, its location  you have already entered on the forms so perhaps more important is to identify the people on the photos. This would come as full circle if you  have asked some of the family members to write a letter confirming marriage and relationship.
3) You do not have to sent a whole album, send some of the engagement (if any) and some of the wedding showing different rituals and you can mentions what is happening in that pic.
If you think, there is lots of, like back of the photo, those boxes in the form. If you think critically, you can say a lot in just few words.
4) You should know the answer to the first part of the question,"YES". You should provide the minimum information they want. Yes, you "can" provide supporting docs not in the check list(s).
Just be concise and be apt. Thinking conservatively, yet logically you can provide "just enough" docs and supporting information that will not  make your package huge and not delay your application in case you miss something. And in the end, hope that docs are enough for IO to reach to a positive decision.   
5) I think it says in the guideline about packing. Forms and supporting docs in one and photos in another (they have mentioned about no staplers etc.)
