I am currently working in a full time permanent job which has a probationary period of 6 months. Am I eligible to apply for Federal Skilled Migration before this 6 months?

I would also like to know, if I have already applied for residency and change my job with another employer what happens then. Do I simply let immigration know about that?

Do I simply let immigration know about that?= you should inform the visa office if u change not only the job but also other things which are listed in your application like address, family structure, etc. in terms of job change, please bear in mind u must have 1 year experience in the professional that is listed in the 27 job lists but u can have this experience from multiple employer's. one more thing, changing thing frequently and as a result informing it to the visa office might sometimes delay ur case.
