is it possible for a new zealander living and working in canada on a 1 year NZWHP to either extend it or to apply for a different type of visa to stay in canada for an extra 6 months or so?

1.  No, NZ IEC (working holiday visa) is a one shot deal.  If you wish to continue to work, your employer would have to apply for a Labour Market Opinion from HRSDC after advertising the position for 2 weeks on the Job Bank and No Canadians or PRs Qualified for the job.  If the LMO is issued, (8-14 weeks) then you could apply for a new work permit.
