I have a 2 years experience as an English language instructor. I'm applying with my wife no kids. I have no job offer from a canadian employer. This my application roadmap . please advice in case there is something missing.

Application process:

1.Initial application to CIO

Application for permanent residence ( IMM 0008 – generic )
Background declaration ( IMM 0008 – schedule 1 )
Additional family information ( IMM 5406 )
Use of representative ( IMM 5476 )
Economic class
Fee payment form
A photocopy of passport
2 self-addressed mailing labels
Documents checklist

2.CIO decision YES/NO  ( 8 weeks to reply i guess)

3.If REFUSED then try to apply for a different category

4.If ACCEPTED then apply to visa office . in my case my visa office is ( Canadian high commission in London )

5.CIO allow 120 days period to submit all applications and supporting documents  to visa office.

Supporting documents to be submitted to visa office :

1.Proof of funds ( CAD 14,000 in my case)

2.Police certificate

3.Medical certificate

4.Proof of language

IELTS
TEF

5.Proof of education

Advanced diploma
ICDL
ELS certificates
TESOL certificates

6.Proof of experience

Notarized contract of employment
Official letters of reference

Thanks

What NOC are you applying under?  Are you applying under category 1?

Category 2 is for people who have a job offer.  Do you have a job offer?

If you want to apply under category 1, your occupation needs to be on this list: http://www.cic.gc.ca/english/immigrate/skilled/apply-who-instructions.asp#list

 @ jammal
AoA
You have described the whole procedure correctly.
Go ahead.
I think your NOC will be 4131 (depends upon your teaching experience).
Best wishes

Don't take Leon's Advice lightly and recheck your NOC and category , otherwise you will be refused at Nova Scotia.
