can anyone explain why the document checklist asks for some documents to be sent as originals, while photocopies of other are specified? as most people must be downloading from internet (and presumably typing in a good deal of the information on the pdf on the computer), and printing most forms, why would they ask us not for that, but a photocopy of what we've printed out? i would think they would prefer originals every time.

does it mean we are to send multiple copies of certain forms?

I don't think you are understanding the instructions.  Of course you are downloading and typing BUT you and your spouse are also signing forms.  They want the forms that have been signed as originals, except I believe for the Sponsorship Agreement between spouses - there a photocopy will do.  Double check this because it's been almost a year since I did mine.  And you should keep a copy of everything you send to them for your own records.

The rest of the documents that they specify to be original or a photocopy have to do with proof and other documents like birth certificates, etc.  Just follow the directions and you will be fine.

Yes, when it comes to the forms they are considered original if they have original signatures on them.
