I have about  C$ 15,000 in provident fund and civil investment fund which can be withdrawn upon resignation or I can get 90% of the deposit as and when required. 

Can I show this as my fund? I can show statements from these organizations as proof.

I have also invested C$5,000 (as per market value) in shares, can this be also my fund?

If you want good answers your question needs to be very specific......you will need to mention your local visa office because documentational requirements varies visa office to visa officer worldover.

for New Delhi Visa office, yes you can show your PF as proof of funds.

shares/Mutual Funds/Bonds.....they will not be accepted as proof of funds (again I am talking about ND office)
