I've been out of status in the US for years. Recently, I've applied to a major Canadian university and got accepted in one of their grad programs. Question is will the fact that I've been out of status affect my immigration approval to get a student permit? Thanks.

Yes, CIC/CHC will look at your application, and find that you didn't respect the US Immigration laws, so that is unlikely that you will respect the Canadian ones, and will most likely will refuse.
