how do you know that the immigration got my package and they will start the proceding for the sponsorship step

If you sent it via courrier service, you can track it via their system. Other than that, call them up.

The only way you will know it was received is if you sent the package with tracking so you can see when it arrived. If you just sent it regular mail then you won't know.
Current processings times for step one (outland) is taking 70 days, so expect a letter in early January.
