Once your wife has landed she need to go into a Service Canada office for her SIN card, she needs to bring her landing papers with her.  She'll be given the number immediately and her card will arrive 7-10 days later.  My bf went to the office by Young and St Clair.

Then head off to an OHIP office,  there is one at 777 Bay and College.  She needs to bring landing papers and something with her address on it.  Coverage will start and she'll get her card 3 months from the day she landed.  There is a 3 month wait in Ontario even if you've been here for years.  My bf had been here since end of 2007.   Best to have visitors insurance for this period of time. Inexpensive and piece of mind.
