On some simple questions like "what province" there's simply not enough room in the digital form to type it in, it stops after a few characters. Is there a workaround to this?

For long answers

In the answer box refer to a separate page (that you add), put your full answer on the added page.
Make sure the separate page lists your details (name etc).
Also ensure that the answer refers to the original form number and question number.
That way the VO can see what you are answering.

Many people place these "added pages" in a section of their own at the back of the application pack.

Use the short form of the province name (e.g. Ontario = ON).
