Is a letter from an employer stating that you work there full time enough?

Yes sure and also if you require a visa you could show that from your passport.

We included details of our joint bank account, utility bills in both our names and lease agreements- all with both our names and our address in Ireland. All of this also served as evidence of our relationship.
