Where can I find more information about the medical requirements for immigrating to Canada? 

I was recently diagnosed with multiple sclerosis, and I can't find any information as to whether that'd be enough to get me disqualified from being sponsored by my Canadian boyfriend.

First of all, you and your bf will have to prove that you are qualified common-law partners in order for him to be able to sponsor you.  If you are eligible, your MS will not make you medically inadmissible to Canada.  Spousal/common-law/dependent child applicants are excessive (medical) demand exempt.  Read Sections 5.19-5.20 of the OP2 Processing Manual and the referenced sections of the the IRPA and the Regulations for more information.

Married 9'06, ap sent 3'07 & refused in 1'08 due to inadmissible son.  Appeal won 1'10.  Ap back in process 4'10, new meds requested 5'10 - submitted in June.  FBI rec'd 8'10 after 12 wks!  Approved 30Nov2010! COPR recd 05Jan2011. LANDED 31Jan2011 YAY!
