For proof of funds, you have to show that the money is available at any time without penalty of withdraw. For example, can you withdraw the money from your life insurance without having to pay a fee? When can you withdraw the money? Are there any conditions placed upon the withdraw?

Bank money is easy verifiable by making a simple phone call/ fax, for LIC you can try, give the current value of policy on letter head of LIC from a authorized person/ office with contact number.  He should write the surrender value and the availability ( no encumbrances) of money at any time. Problem can be that Bank people respond to phone calls of visa offices but you would have to check about LIC response on phone call.
