Hi guys, just a couple of important questions:

1. I know we must declare any amount you are carrying over CA$ 10,000. But if I am bringing CA$ 20,000 and I declare it, what is going to happen? Will I have to pay taxes?

2. When filling out the list of good that are accompanying and goods to follow, must I list everything, such as t-shirt, socks, or just eletronics and expensive stuff? Do we have to be very specific when listing or just a brief description of the item?

3. Are these what I need to bring?
a. Landing papers
b. Passport
c. Proof of funds
d. Medical for my son
c. Photos

Is there anything else?

No, it will not be taxed, it's just part of Canada's rules (or any other country for that matter) that if you are carrying over CAD 10k then you must declare it

b. Passport with PR visa stamp
c. Proof of funds maybe in cash or a bank statement, bank draft or traveler's cheques whichever you prefer
d. Medical for my son what kind of medical condition does your son have, why would he need a medical to land? as far as i know, you need to have with you his immunization records, for when he enrolls in school. Also, if your spouse is not travelling with you, you may want to bring along an authorization signed by him/her allowing your son to travel with you.
c. Photos
 recommended you bring a few, just to be sure in case they ask for it for your PR card

rubyalabar gave you the correct answer.
Regarding the accompanied and unaccompanied items, you don't have to list all the small items which is not so costly like a pocket digital camera or cell phone, electric shaver etc. Even if you does not list your laptop if you bring along there is no problem. You get an embarkation form in the flight to fill up before landing. Those particulars will be enough for accompanied items. For any items sent by cargo shipment, you can list it as a group example like: Assorted men's dress : 20 pieces, Assorted ladies dress : 30 pieces, Assorted children's dress : 25 pieces , Assorted shoes : 10 pairs,  Linen and towels : 15 pieces,  Mixed Crockery : 2 box, etc..etc  ..... add everything as bulk or group.
My recommendation is that do not bring too many items from your country. Many of the items you can buy cheap from the outlet malls during sale. If you bring any electrical instruments make sure they are dual voltage or 110/120 Volt. Equipments with only 220/240 volt will not work here.

I am sorry. When I said Medical for my son, I meant Immunization Records. We current live in the US and I will bring the basics. I will keep my furniture in a storage here int he US and ask my brother to send everything to me when I find an apartment to live. Do I make a copy of the "list of items to follow" and fax it to my brother so that when he sends my stuff to me, he sends it along with it?

Actually, you need to have the list of items that will follow when you land, 2 copies. one the customs guy will keep and the other s/he will stamp and give to you so when the goods come you show this list to cusotms and they will not tax you for these items.
