I received my PPR last week from the Buffalo office. I intend to pick up my visa on 20th October and after that I plan to visit canada on the 30 October. Clearly I can choose to become a landed immigrant on the 30th but I have not found a job yet in Canada and I only want to move after I get a job. Once I choose to get a stamp in my passport as landed immigrant...do I have to declare at that very moment what personal items I will be bringing into Canada eg Car, furniture, clothes, etc. Can someone please help with this.

Yes, at the time of "landing" you submit you goods accompanying and your goods to follow lists.

So do i have a choice on when I decide to land....so in my example, I will get my passport stamped on 20th October, I intend to enter canada on 30 October but I am not prepared to land yet because I am not sure what I am going to be bringing into canada. So can I choose to enter canada just a visitor on 30th October and choose a landing date sometime later on

Not unless you have another passport which is not affixed with the COPR.  

However, if you make this landing trip as a chance to visit Canada is not a bad idea.  At "landing", you can always include everything you possess in the goods to follow list and get it stamped.  That way, at a later time when you are ready to live in Canada, you can sort out what belongings from your country to bring to Canada customs free.

Plus, once you have landed you can obtain and SIN and open a bank account, do whatever you need to do, then when you are ready to apply for a job everything will be in order.
As others have said, you can land with your goods to follow list and bring your possessions at a later date.
