Im just filling out my forms..and no where in Part 1 do i see a place where the sponsor can put his email address

In part 2, i saw the sponsor has a place to put an email address...

how will CIC get in touch with the sponsor by email if they don't ask for it on the forms?

They dont get in touch with the sponsor via email. The only thing the sponsor will receive is the refusal or approval letter for sponsorship.  Only if the sponsor is elected the representative for the applicant will they ever receive any other correspondence.

Then how do i know what the status of the application is whether i've been approved as a sponsor or whether its in progress.  the way i see in some ppl time line in there signature.

They mail you the letter approving you as the sponsor by regular postal mail. Once you have a file number, you can check your application status on ecas: https://services3.cic.gc.ca/ecas/?app=ecas&lang=en

You will get regular mail with Client ID number for Ecas where you can check what is going on with your application, while your spouse will be contacted either through email/regular mail, depends on Visa office.

If you are going to be representative of your spouse, then you will be the one who they will contact. How? Again depends on visa office you are dealing with

Most of the time they will call you however they will not leave you a number to call them. Reason is obvious, they have a lot
of cases everyday...

What if you are not home when they call you? Do they only call once, or will they call again?

It is extremely unlikely that CIC/CHC will call the sponsor or the applicant by phone.
