My parents will be visiting me around Christmas. I was wondering how difficult is it to extend their visitor stay.

What sort of things do I need to submit in order to get their visa extended?

Quite easy, you can do it by post or online, start reading here:
http://www.cic.gc.ca/english/visit/extend-stay.asp

Once you have digested that, ask questions.

All depends on the specific case:
Are your parents from a visa except country, do they have lots of ties back to their own country, what is their travel history like, what are the reasons for the visit, can they support themselves, will you support them, can your parents make  good case that they will leave Canada.

If you meet all the conditions shown at the web page then it is easy to get an extension, the less convincing your case, the less likely  a positive outcome.

I know of a few people who have extended for a total of three of four years. I have been issued multiple extensions (four VR's if I remember correctly).

How long do you want your parents to stay in Canada?
Have you applied to sponsor your parents?

I will be applying for their Family Sponsorship any time this month. After that's done, they'll submit their documents for a TRV hoping to get the 10 year multiple visa (Indian Nationals - Elderly Parents). I would like them to stay with me for longer time e.g. 2 years in a row. Then perhaps they can go out for vacation to India or US for a month or two and then come back. That's the plan.
